CREPE RECIPE

INGREDIENTS
- 1 cup all-purpose flour (about 4 ½ ounces)
- 2 tsp sugar
- ¼ tsp salt
- 1 cup low-fat 1% milk
- ½ cup water
- 2 tsp butter, melted
- 2 large eggs

METHOD
- Measure flour by lightly spooning it into a dry measuring cup and leveling with a knife. Combine with sugar and salt in a bowl.
- Blend milk, water, melted butter, and eggs until smooth in a blender.
- Mix flour mixture into milk mixture until smooth, then chill batter for 1 hour.
- Heat an 8-inch nonstick crepe pan over medium heat. Pour a scant ¼ cup batter, tilting pan to cover thinly.
- Cook for about 1 minute until the crepe's edge can be lifted with a spatula, then flip and cook for 30 seconds more.
- Cool crepes on a towel and repeat with remaining batter, stacking crepes between wax paper to prevent sticking.
- Add some mascarpone and carrot jam and fold into quarters.
