This delicious recipe features our unique Carrot Jam paired with mascarpone crepes- the perfect balance of sweet and salty!

    • 1 cup all-purpose flour (about 4 ½ ounces)
    • 2 tsp sugar
    •  ¼ tsp salt
    • 1 cup low-fat 1% milk
    • ½ cup water
    • 2 tsp butter, melted
    • 2 large eggs

    1. Measure flour by lightly spooning it into a dry measuring cup and leveling with a knife. Combine with sugar and salt in a bowl.
    2. Blend milk, water, melted butter, and eggs until smooth in a blender.
    3. Mix flour mixture into milk mixture until smooth, then chill batter for 1 hour.
    4. Heat an 8-inch nonstick crepe pan over medium heat. Pour a scant ¼ cup batter, tilting pan to cover thinly.
    5. Cook for about 1 minute until the crepe's edge can be lifted with a spatula, then flip and cook for 30 seconds more.
    6. Cool crepes on a towel and repeat with remaining batter, stacking crepes between wax paper to prevent sticking.
    7. Add some mascarpone and carrot jam and fold into quarters.
